It almost sounds aggressive, but the truth is, I love it! I love pumpkin recipes and I'm always looking for new ideas.

These Pumpkin and Spice Pancakes are perfect for a family breakfast, or for a greedy and comforting snack.

How do you make these Pumpkin and Spice Pancakes?

If you think these pancakes are thin and fluffy, forget it! They really are those greedy, thick and spongy pancakes (I think you get it ahah).

The batter is very thick, but of course if you want, you can always add more milk to make the batter more liquid and the pancakes thinner.

An important tip… To make the pumpkin puree, bake the pumpkin in the oven and when it cools down, crush it into puree.

In my opinion, it is much better than boiling the pumpkin in water or steam, because the puree has less water.

For this recipe you'll need:

  • Pumpkin puree
  • Mix de especiarias (canela, gengibre, cardamomo, noz moscada)
  • Salt
  • Milk
  • Eggs
  • Olive oil (or coconut oil)
  • Oat flour (or other)
  • Maple Syrup

What are the tricks to hit the nail on these Pumpkin and Spice Pancakes?

  1. Use pumpkin puree, preferably made in the oven. This way, you will have less water and will be better for the consistency of the pancakes.
  2. Spices make all the difference in this recipe, as they will give the pancakes all the flavor.
  3. For me, these pancakes are better with olive oil, because it will accentuate the flavor of the spices.
  4. Salt serves to balance flavors.
  5. Add the flour little by little so that it is incorporated throughout the dough and obtain the desired consistency. If the dough is too thick, add a little milk.

Pumpkin and Spice Pancakes

Ingredients

  • 1 cup pumpkin puree
  • 1 tsp cinnamon
  • ½ tsp ginger
  • ½ tsp cardamom powder
  • ½ tsp nutmeg
  • A pinch of salt
  • cups milk
  • 2 eggs
  • ¼ cup olive oil or coconut oil
  • 2 cups oatmeal flour or other
  • Maple Syrup to taste

Instructions

  • Start by putting the pumpkin puree in a large bowl along with the spices and mix well.
  • Add the salt and milk and mix everything until you get a smooth, liquid mixture.
  • Add the eggs and fold. The mixture should start to thicken a little.
  • Add the oil and mix again.
  • Add the flour little by little, always incorporating it into the mixture.
  • When you get a homogeneous mixture, place ladles of dough in a very hot skillet.
  • Cook on 2 sides and repeat the process until the dough is finished.
  • Serve with maple syrup.

Notes

If you don't like any of the spices, you may not use it. But I advise you to add at least one of the spices, as they really make a difference in the flavor of the pancakes.
Coconut oil may be used, but it will slightly alter the flavor of the pancakes.
If you prefer, you can substitute milk for a vegetable drink.
If you use another flour, just pay attention to the quantity. For whole wheat, spelled flour, the amount does not change, but for example for rice, coconut or almond flour, you have to adjust the amount.
