Pumpkin Spice Pancakes

Ingredients

  • 1 cup pumpkin puree
  • 1 tsp cinnamon
  • ½ tsp ginger powder
  • ½ tsp cardamomo em pó
  • ½ tsp cardamom powder
  • Uma pitada de sal
  • cups milk
  • 2 eggs
  • ¼ cup cup olive oil  or coconut oil
  • 2 cups oatmeal flour or another flour of choice
  • Maple Syrup a gosto

Instructions

  • Start by putting the pumpkin puree in a large bowl along with the spices and mix well.
  • Add the salt and the milk and mix everything until you get a smooth, liquid mixture.
  • Add the eggs and incorporate everything together. The mixture should start to thicken a little.
  • Add the oil and mix again.
  • Add the flour little by little, always incorporating it into the mixture.
  • When you get a homogeneous mixture, place scoops of dough in a very hot skillet.
  • Cook on both sides and repeat the process until the dough is finished.
  • Serve with maple syrup.

Notes

If you don't like any of the spices, you do not have to use it. But I advise you to add at least one of the spices, as they really make a difference in the flavor of the pancakes.
 
Coconut oil may be used, but it will slightly change the flavor of the pancakes.
 
If you prefer, you can change the milk to a vegetable drink of choice.
 
If you use another flour, just pay attention to the quantity. For whole wheat and spelt flour, the amount does not change, but for example for rice, coconut, or almond flour, you have to adjust the amount.
