Carrot Pancakes

Cook Time:20 minutes

Portions: 8

Ingredients

  • 1 carrot
  • 2 cups oat flour
  • 1 cup milk of choice
  • 1 tbsp coconut oil
  • A pinch of salt
  • 1 tsp baking powder

Optional toppings:

  • Yoghurt
  • Blueberries

Instructions

  • Combine all the dry ingredients in a bowl and mix well.
  • Separate the egg yolks from the whites and place the egg yolks in a bowl.
  • Whip the egg whites on a different bowl until foamy and set aside.
  • Add the liquid ingredients to the egg yolks and stir well and add it to the dry mixture combining everything together.
  • Add the whipped egg whites and fold gently.
  • Scoop the batter into a hot frying pan in medium-low heat greased with coconut oil (you can make 3 or 4 at the same time depending on the size of the pan) and cook for 2/3 min.
  • Turn the pancakes and cook for 1/2 more min.
  • Repeat the process until the batter is finished.
  • Let the pancakes cool and serve it with yoghurt and blueberries.
