Ingredients

  • 5 sheets phyllo pastry (for a gluten-free version, substitute for gluten-free puff pastry)
  • 150 g goat cheese
  • Honey, to taste
  • Fresh thyme, to taste (optional)
  • A pinch of salt
  • Walnuts or other chopped nuts, to taste
  • 100-150 grams Sliced mushrooms (optional)

Instructions

  • Cut each phyllo pastry sheet in half to create smaller sheets.
  • Brush each sheet with olive oil and layer 4 to 5 sheets to form the base for each cup.
  • Cut the layered sheets into four equal parts.
  • Place each square into muffin tins or similar molds to shape the cups.
  • Add a piece of goat cheese to the centre of each cup, as well as 10-15 grams of the sliced mushrooms (if using). Drizzle with honey, sprinkle with a pinch of thyme (if using), a pinch of salt, and some chopped walnuts or other nuts on top.
  • Preheat the oven to 180°C and bake for 12 to 15 minutes, or until the edges of the pastry are golden and crispy.
