Yes, the year is coming to an end and with that, there is the beginning of winter and Christmas recipes… And that’s exactly what we wanted to make for you.
This a recipe for any time of the year, but that tastes even better in this very special season.
A Christmas loaf to enjoy with family, to celebrate, and to give you lots of pleasure!
It’s by no means the healthiest recipe in the world, but it’s also not the biggest disaster of all time either!

MEATLOAF RECIPE (APPROX. 6 TO 8 SERVINGS – 2 LOAVES)
INGREDIENTS:
- 500 gr beef, minced
- 1 package of instant onion soup
- 1 package of cream
- 2 cups fresh spinach
- 1 cup grated cheese
- 1 package of puff pastry (I bought the ones that bring 5 sheets)
- 1 egg for brushing
PREPARATION METHOD:
- Start by preheating the oven to 180º.
- In a large bowl, place the minced beef. I usually ask the butcher to mince the beef on the spot and I try to always choose lean beef.
- Add to the bowl 1 packet of instant onion soup and the packet of cream.
- Mix them until the cream and onion soup are completely incorporated into the meat.
- Place baking paper on an oven tray and lay out the meat.
- The meat should be spread out, forming a relatively thin rectangle.
- Sprinkle with grated cheese and arrange the spinach at one end along the length of the meat.
- Slowly lift the end where you placed the spinach and start to roll it up as if it were a pie. If necessary, use the baking paper to help you form a roll (i.e., so that it starts becoming a loaf).
- Bake the meatloaf in the oven for about 20 min.
- While the meatloaf is in the oven, place another sheet of baking paper on an oven tray.
- Arrange the sheets of puff pastry so that they form a rectangle. Press the edges of the puff pastry tightly together so that they “stick” to each other and become one.
- Remove the meatloaf from the oven and let it cool for about 10 minutes.
- Using a spatula and a fork (or whatever kitchen utensils you have), place the meatloaf on top of the puff pastry and slowly roll it in until the puff pastry wraps around the entire roll.
- Beat an egg and brush it on top of the puff pastry to make it look more golden after baking.
- Put the meatloaf in the oven for 7 min.
- At the end of the 7 min, put the oven on the grill mode and bake for another 3 min.
- Remove the meatloaf from the oven.
- Serve it with a cup of Dory Reserva wine.
LENTIL LOAF RECIPE (APPROX. 6 TO 8 SERVINGS – 2 LOAVES)
INGREDIENTS:
- 1 cup (250ml) raw brown lentils
- 1 pack vegetable cream (e.g. rice)
- 1 flaxseed egg (1 tbsp ground flaxseed + 3 tbsp water)
- 2 cups fresh spinach
- 1 cup vegan grated cheese
- 1 package gluten-free puff pastry
- Seasonings: salt, turmeric, ground cumin, black pepper
PREPARATION METHOD:
- Start by soaking the lentils for 6 to 8 hours.
- Cook the lentils with double the water (2 cups) and season it with salt.
- Meanwhile, in a small bowl, pour 2 tbsp of vegetable cream and season it with turmeric. Set aside.
- In another small bowl, make the flaxseed egg and set it aside as well.
- When the lentils are ready, turn off the heat and drain the excess of water.
- Next, preheat the oven to 180º.
- In a large bowl, place the cooked lentils.
- Add to the bowl the flaxseed egg and the rest of the package of vegetable cream.
- Season with a little more salt, ground cumin, and black pepper. Mix it well.
- Place baking paper on an oven tray and arrange the puff pastry.
- Spread the lentils on top.
- Sprinkle with vegan grated cheese and place the spinach on top of it.
- Slowly lift one end and start rolling it in like a pie. If necessary, use the baking paper to help you form a roll (so that it resembles a loaf).
- Brush it with the cream and turmeric mixture – it will make it look golden brown after baking.
- Bake the loaf in the oven for about 35 minutes.
- Remove the loaf from the oven and let it cool for about 10 minutes.
- With the help of a spatula and a fork (or whatever kitchen utensils you have), place the loaf on a platter or tray.
- Serve it with a green salad.
Suggestion: Serve the meatloaf or lentil roll with white rice and a salad. You can also make lemon and turmeric risotto, which is wonderful!
If you prefer, you can stuff the loaf with other ingredients. It tastes great with sliced mushrooms and goat cheese.
Serve with your favorite wine. The Dory Reserva from Adega Mãe is just a suggestion.
