This Oatmeal Pancakes Recipe is really good!

I love to eat pancakes, especially for breakfast. In fact, I could eat pancakes all the time!

When I have time, I usually make these oatmeal pancakes for the next day’s breakfast, and I usually make a generous amount so that they last a good few days. This way I don’t have to be cooking them all the time and it saves me a few minutes for other things.

Usually, when I go to a restaurant or cafe for brunch, the plate of pancakes cannot be missed. It’s a staple, that mandatory order that comes at the end to finish and it fills my stomach a little more. It’s that addiction that insists on not going away, no matter how much I want it to.

And let’s be honest, in cafes or in restaurants, pancakes are always great and super fluffy. I still haven’t figured out what the secret is, but no matter how hard I try, my homemade pancakes never feel the same! Or it’s just my mind that automatically thinks pancakes in cafes and restaurants are the fluffiest in the world!

These oatmeal pancakes, after all, came out very fluffy and light.

I don’t usually make sweet pancakes per se, I usually add sweetness at the end, such as a drizzle of honey. But this Oatmeal Pancake Recipe is a sweet recipe in its own right, even if it’s not overly sweet. I used brown sugar because I think it is healthier and thus weighs less on my mind. Although, it doesn’t hurt to have sweeter pancakes from time to time.

Plus, this Oatmeal Pancake Recipe is super easy to make, and super practical. You guys will love it! I can tell you that my official taster, a 2-year-old, LOVED it! He didn’t stop eating the pancakes until they were done, it was amazing. I confess that I felt like making more, just to see that kid eating the pancakes with the greatest pleasure ever and with a huge smile on his face!

So, in the absence of an out-of-home brunch, this Oatmeal Pancake Recipe is perfect for a brunch at home, made by you with lots of love and care. All the ingredients are healthy, so you can invite all your friends over to eat these pancakes guilt-free!

You’ll see that they’ll be done in no time and even ask you for a second round of them.

It’s also a great solution for a weekday breakfast. As I said before, the recipe is not too sweet, it’s nutritious and satiates you for an hour. Accompany it with a morning cup of coffee or a glass of milk. You can also make natural orange juice.

Oatmeal Pancakes Recipe (around 10 pancakes):

For the Oatmeal Pancakes:

  • 2 cups oats (in flour)
  • 1 cup milk
  • 2 eggs
  • 1 cup brown sugar
  • 2 tsp coconut oil
  • 1 tsp baking powder
  • 1 csp baking soda
  • Strawberries to decorate
  • Honey/ Agave nectar / Maple Syrup

Preparation Method:

  1. If you haven’t ground your oats yet, now is the time. Grind the oats using a food processor or blender until it has the consistency of flour.
  2. Add the eggs and milk to the oats, now flour. Do not let the batter become lumpy.
  3. Add the brown sugar to the previous mixture and mix well.
  4. Fold in the coconut oil. If the coconut oil is solid, heat it slightly in the microwave so that it softens. This way it is easier to incorporate.
  5. Add the yeast and the baking soda and mix well in the previous mixture, so that they are evenly spread through it.
  6. In a hot frying pan, pour the batter into a circle (the normal shape of a pancake).
  7. Let them cook for about 2 minutes on each side and repeat the process until you run out of batter.
  8. Place the pancakes on a plate forming an oatmeal pancake tower.
  9. Wash the strawberries and place them on top of the pancakes.
  10. Top with a drizzle of honey, agave nectar, or maple syrup.
  11. Serve.

Suggestion: Use the fruits you enjoy the most as toppings. The strawberries are only an example. All fruits are a possibility, you just have to use your imagination.

You can also add chocolate shavings or grated coconut on those days you need something yummier.
