Who loves a good Vegetarian Ramen recipe? I do, and this one is pretty good!

And the best thing is that it’s so simple, it takes no time at all to make!

When I think of Asian food, ramen is one of the first things that comes to my mind. Ramen and sushi. ahah

However, when I think of cooking Asian food, ramen is probably the first thing I think of.

Why? For one thing, it’s super easy to make and it’s also super cozy. It tastes good at any time, especially on those cold winter days.

I especially like making vegetarian ramen because it’s super quick to prepare and I usually have all the ingredients on hand.

Plus, it works with just about any kind of vegetable, so you really just have to open the fridge and see what’s there.

There are many cooking tricks and every recipe is a recipe. But for me, the big secret is to use miso paste to bring out the flavors of the ramen.

It goes perfectly with vegetarian ramen and any other ramen!

The miso paste also helps to make the broth richer and more robust in texture.

And despite the long list of ingredients, don’t be alarmed, because it’s just a snap! The recipe is really easy and in a few minutes, you can have a mega meal ready to serve.

Believe me, it’s a winning recipe at home. I make it all the time!

How do you make this Vegetarian Ramen?

This is perhaps one of the easiest ramen recipes I usually make.

If you look at it right, you just have to chop the vegetables and sauté them with a little olive oil.

Then you make the broth, add the vegetables sautéed and add the noodles.

If you read the recipe properly, you will realize that it is as easy as that!

 

For this recipe you’ll need:

  • Onion
  • Zucchini
  • Spinach
  • Leek
  • Olive oil
  • Miso paste
  • Boiled eggs
  • Salt
  • Pepper
  • Soba noodles (or others of your choice)
  • Boiling water
  • Nori or wakame seaweed
  • Vegetable broth
  • Soy sauce
  • Sesame seeds

What tricks will ensure that this vegetarian ramen tastes just right?

To begin with, you need to know that noodles are super easy and quick to cook and that they need nothing more than a few minutes soaking in boiling water.

As for the ramen broth, the base is a combination of boiling water and the miso paste that will be dissolved in the water.

To add a little more flavor, soy sauce is added.

If we want a more complex broth, we add vegetable broth.

Finally, the egg trick: cook for 6 min if you want the eggs undercooked (I love it!) or 7 to 10 min if you want the eggs well cooked.

Vegetarian Ramen

This Vegetarian Ramen is super easy to make and is super cozy. It tastes good anytime, especially on those cold winter days. It is ideal to surprise friends and family.

Ingredients

  • 1 onion
  • 1 zucchini
  • 1 cup spinach
  • ¼ leek
  • A drizzle of olive oil
  • 4 to 6 tbsp miso paste
  • 2 underboiled eggs
  • Salt to taste
  • Pepper to taste
  • 2 servings soba noodles
  • 4 cups boiling water
  • nori seaweed or wakame to taste optional
  • 2 cups vegetable broth optional (preferably homemade)
  • 1 to 2 tbsp soy sauce optional
  • Sesame seeds to sprinkle

Instructions

  • Start by chopping the onion into very small pieces. Set aside.
  • Also cut the zucchini into cubes and the leek into rounds. Set aside.
  • Put the chopped onion in a pot with olive oil and cook over medium-high heat for 2 min or until it starts to get soft.
  • Add the zucchini and leek and cook for another 1 or 2 min.
  • While the vegetables are cooking, you can boil the water in a kettle (I find it easier this way because the noodles only need to be slightly boiled, but you can boil water in a pot for example).
  • Add the miso paste to the pot of vegetables and let it dissolve slightly.
  • If you want to add the vegetable broth, put it in the pot now and let it boil.
  • Add the boiling water and let the rest of the miso paste dissolve.
  • Season with salt and pepper and add the spinach and soba noodles.
  • Cook for about 3 minutes and turn off the heat. Let it rest.
  • Meanwhile, boil the eggs for 6 min (so that they are undercooked) or, 7 to 10 min, if you prefer hard-boiled eggs.
  • Add the soy sauce to the broth, if you choose to add it.
  • Assemble your vegetarian ramen: place the noodles in a bowl, then the broth and the vegetables.
  • Add an egg broken in half and some nori or wakame seaweed.
  • Repeat the assembly process for the second bowl.
  • You can also add some sesame seeds on top.

Notes

Use the vegetables you like best. Personally, I like this combination and they are vegetables that I usually have at home, but try other combinations.
With mushrooms and pak choi, it also leads to a delicious result! Perhaps one of my favorite combinations!
Use broths to enhance the flavor, if you prefer, such as the vegetable broth I mentioned in the recipe, or even chicken or beef broth. When I do, I like to use homemade broths, which are healthier.
You can use poached eggs if you prefer (but it's harder to eat with chopsticks).
If you like, you can put meat (chicken or beef, for example) or even seafood (such as shrimp) in this ramen. Lightly fry in olive or coconut oil and flavor with some teriyaki sauce or even peanut sauce and serve.

  1. Olá. Tem um aspecto delicioso. Pergunto se podemos juntar Tofu como proteina em vez do Ovo ou a par e se em vez desta Alga podemos utilizar outra, como a Wakame. Obrigada
