Ingredients
1cupwatercress or micro-leaves of your choice
1cuparugula
1cupfresh raw spinach
1cupstrawberriesin halves
½cupcherry tomatoesfresh raw spinach
½cupgreen currantsor green grapes in halves
1burrata
¼cupchopped almonds
A drizzle of olive oil
A drizzle of balsamic vinegar
Salt to taste
Instructions
Wash the leaves and fruits well and cut them into halves.
Arrange the leaves in layers.
Add the cherry tomatoes, strawberries, and green currants.
Add the whole burrata or coarsely broken (as you prefer).
Sprinkle with the chopped almonds.
Add the seasonings and enjoy!
Notes
If you don't have any of these fruits, no problem. Try whatever fruit you have on hand. Blueberries and raspberries work great.Apples are also great in salads, as are peaches. It's really a matter of experimenting.You can use other types of cheese, such as feta, mozzarella, or goat cheese.Add citrus zest for freshness.
