They are perfect for breakfast and, if you make them on the previous day, you won't have any work in the morning.

Ingredients
2cupsspelt flour
Salt to taste
1¾cupmilk
1tbspolive oil
2eggs
1tspbaking powder
Maple Syrup
Blueberries
Butter to put on topoptional
Instructions
In a bowl, mix the flour with the salt.
Add the milk and the olive oil and mix well.
Separate the yolks from the whites and whip the egg whites. Set aside.
Add the yolks to the bowl and fold them into the mixture.
Add the whipped egg whites and the baking powder and fold them into the mixture.
Pour ladles of the mixture into the waffle maker once it is very hot.
Let them cook for 2 to 3 min or until they are golden brown and crispy.
Repeat the process until you finish the batter.
Serve with blueberries and maple syrup. If you like, add a small square of butter, which looks really yummy.
Notes
You can make the waffles right away, but the result is even better if you let the batter rest for 30 min.You can make around 8 waffles with this recipe and I usually make them all because I like to have waffles ready for the following days.To heat them up just put them back in the waffle maker or on a pan for a few minutes. Or for the lazy ones, put them in the toaster and they'll still taste AMAZING!You can also store the waffles in the freezer, so you always have them handy.
