Add the milk or plant-based drink and mix it well with a wire whisk, for about 5 minutes.
Add the coconut jelly or the sweetener you prefer and mix once again.
Place the chia pudding in the fridge for a few minutes. Remove and stir it again.
Repeat the previous steps 3 to 3 times or until you achieve the desired consistency.
Save it in the fridge until the lemon curd is ready.
For the lemon curd
Start by zesting the lemon and place the zest aside.
Then, squeeze the lemon and reserve it aside in another recipient.
Add the remaining ingredients to a bowl and stir it softly with a wire whisk.
Add the lemon juice and mix it carefully again.
Place the previous mixture, adding the lemon zest, in a pan in a bain-marie (i.e., hot water bath).
Fold it well with the wire whisk, with soft and circular movements, until you achieve the desired consistency.
Let it cool for a moment.
To assemble the chia pudding with lemon curd
Put the chia pudding in 3 tiny glass cups.
Add the lemon curd on top.
Cover with cling film, right on top of the lemon curd, so it does not dry.
Place it in the fridge until it reaches the desired temperature.
Take it out from the fridge and serve it with a yogurt spoon and some pistachios on top.

This recipe is super practical and versatile.You can use whichever topping you want, lemon curd is wonderful but you can use others.It is also possible to make curd with other fruits, such as wild berries (fresh or frozen) or mango.Regarding the milk and the plant-based drinks, you can use the one you prefer and you can also make a mix of the milk or plant-based drink with water.About the toppings, I love this combination with pistachios but use whatever you want from other dried fruits to seeds or chocolate shavings. You get it, choose what you prefer the most.
