Lately, I’ve been asked a lot to explain how I make my chia pudding.
And here I am, complying with your requests. ahah
Actually, I posted the recipe quite a while ago and the base is always the same.
Then I use a few different combinations to vary and experiment with new flavors and textures.
This time the choice fell on a precious ingredient in the kitchen: lemon!
A chia pudding with lemon curd, which is quite versatile and quite tasty. eheh
Plus, it’s very easy to make and this is a healthy version of lemon curd, so it’s guilt-free to eat.
There’s nothing better than that, eating with the greatest pleasure, without thinking about calories and without restrictions.

What tricks will ensure that this Chia Pudding with Lemon Curd tastes just right?
I love to make chia pudding because it is not only practical and easy, you can use it in many recipes.
As I said previously, with the same basis you’re able to make several recipes, tasty and not boring at all!
This is my biggest pleasure, being able to eat food that is tasty and full of character. Forget tasteless or just plain food.
And did you know it is possible to make healthy lemon curd?
You don’t need to make one full of sugar and nasty things. Are you curious?
The big trick for the chia pudding is to stir it very well the mixture until the chia thickens.
It needs a lot of patience, but it is so worth it! Even because chia thickens relatively fast.
It is important to pay attention to the quantities so that the mix doesn’t get too liquid, otherwise, it will not thicken enough.
For the chia pudding with lemon curd you’ll need:
- Chia seeds
- Milk or plant-based drink
- Coconut jelly or another sweetener of your preference
- Eggs
- Honey, preferably a good quality one. You can use another sweetener, but in this process it is relevant it is a liquid one
- Coconut oil
- Lemon juice
- Lemon zest

Chia Pudding with Lemon Curd
Ingredients
For the chia pudding
- 6 tbsp chia seeds
- 1½ cup milk or plant-based drink
- 1 tbsp coconut jelly
For the lemon curd
- 3 eggs
- 1 tbsp coconut oil
- 1 tbsp Honey
- Juice of 1 lemon
- Zest of 1 lemon
Instructions
For the chia pudding
- Place the chia seeds in a bowl.
- Add the milk or plant-based drink and mix it well with a wire whisk, for about 5 minutes.
- Add the coconut jelly or the sweetener you prefer and mix once again.
- Place the chia pudding in the fridge for a few minutes. Remove and stir it again.
- Repeat the previous steps 3 to 3 times or until you achieve the desired consistency.
- Save it in the fridge until the lemon curd is ready.
For the lemon curd
- Start by zesting the lemon and place the zest aside.
- Then, squeeze the lemon and reserve it aside in another recipient.
- Add the remaining ingredients to a bowl and stir it softly with a wire whisk.
- Add the lemon juice and mix it carefully again.
- Place the previous mixture, adding the lemon zest, in a pan in a bain-marie (i.e., hot water bath).
- Fold it well with the wire whisk, with soft and circular movements, until you achieve the desired consistency.
- Let it cool for a moment.
To assemble the chia pudding with lemon curd
- Put the chia pudding in 3 tiny glass cups.
- Add the lemon curd on top.
- Cover with cling film, right on top of the lemon curd, so it does not dry.
- Place it in the fridge until it reaches the desired temperature.
- Take it out from the fridge and serve it with a yogurt spoon and some pistachios on top.

Quanto ao curd de mirtilo, é possível fazer sim! Deixo 2 sugestões:
– Reduza os mirtilos a sumo (ou triture num liquidificador) e siga o processo da receita.
– Faça uma calda de mirtilos, colocando-os numa panela com açúcar até que reduzam e caramelizem (esmague um pouco os mirtilos para facilitar o processo).
