Carrot Cake with chocolate ganache

Ingredients

  • 3 carrots
  • 4 tbsp brown sugar
  • 3 eggs
  • 1 cup rice milk
  • 4 tbsp olive oil
  • Pinch of salt
  • 2 cups oat flour
  • 1 tsp baking powder
  • 1 tsp baking soda
  • 1/2 chocolate bar 85% cocoa

Instructions

  • Mix everything at maximum power in a food processor or blender.
  • Spread a baking pan with coconut oil and flour and pour the mixture into it.
  • Bake in a pre heated oven at 170°C for 45 minutes or until the cake is golden brown.
  • Let it cool before unmolding.
  • Melt the chocolate in a bain marie (or in the microwave to make it easier) and pour over the top of the cake.
