Carrot Cake with chocolate ganache
Ingredients
- 3 carrots
- 4 tbsp brown sugar
- 3 eggs
- 1 cup rice milk
- 4 tbsp olive oil
- Pinch of salt
- 2 cups oat flour
- 1 tsp baking powder
- 1 tsp baking soda
- 1/2 chocolate bar 85% cocoa
Instructions
- Mix everything at maximum power in a food processor or blender.
- Spread a baking pan with coconut oil and flour and pour the mixture into it.
- Bake in a pre heated oven at 170°C for 45 minutes or until the cake is golden brown.
- Let it cool before unmolding.
- Melt the chocolate in a bain marie (or in the microwave to make it easier) and pour over the top of the cake.
