A delicious recipe with few ingredients that makes a meal to drool over. It's light and fresh and is perfect to enjoy with family, for 2 on a special occasion, or even on a simple day if you want something simple but surprising.
½cupolive oil(if the dough gets too dry, add a little more)
Salt to taste
1whipped egg yolk
For the filling
2thinly sliced red onions
Salt to taste
Pepper to taste
1tbspolive oil
2sliced cocktail tomatoes
2sliced Roma tomatoes
10cherry tomatoes cut in halves
1drizzlehoney(preferably homemade or of good quality)
To finish
1big packagecottage cheese Lactimonte(or 2 small packages)
Basil to taste
Instructions
For the dough
In a large bowl, put the flour and salt and mix them together.
Add the olive oil and fold it into the mixture.
Once the oil is incorporated, knead well until you have a homogeneous dough and make a ball.
Sprinkle a flat surface with flour, lay out the dough, and roll it out to form a circle. It doesn't have to be perfect, it can look a bit rustic.
Make some little holes in the dough and set aside.
For the filling
Slice the red onion into very thin slices.
In a frying pan, drizzle some olive oil and let it heat up.
Add the sliced red onion and saute a little.
When the onion starts to soften, add the salt and pepper. Stir well.
Finally, when the onion is well cooked and translucent, add a dash of honey, mix well, and set aside.
Slice the Roma/Cocktail and cherry tomatoes into slices and halves respectively and set aside.
Assemble your galette. Start by placing the onion as the first layer.
On top of the onion, put layers of tomatoes, interspersing the different types.
Close the edges of the galette.
Beat an egg yolk and brush it on the edges of the galette.
Bake in a preheated oven at 180º for 15 minutes or until the dough is cooked and the edges are golden brown.
To finish
Sprinkle with pieces of fresh cheese, crumbled coarsely with your hands.
Add some basil leaves.
Serve and enjoy!
Notes
You can add more spices, like paprika, turmeric, thyme, coriander, you name it. I wanted this galette to be very simple but add your favorite seasonings. As I mentioned, choose the flour you like best. I made it with oat flour because I really like to use it and because I had it at home.Use a fat of your choice, but be aware that it changes the flavor a bit. I love the taste of olive oil in combination with tomato, which is so characteristic of our Mediterranean gastronomy. As for the honey, use whatever sugar/sweetener you prefer. I find honey quite healthy, and tasty and it's a very Portuguese ingredient. But feel free to use sugar, maple syrup, coconut jelly, you name it...Finally, Lactimonte cottage cheese is wonderful in this recipe, but you can also use requeijão (Portuguese cheese similar to ricotta but with a stronger, salty taste) which is also great and creamy.
