Tomato Bruschetta

Ingredients

  • 1 tomato
  • 1 tapas tomato
  • Olive oil to taste
  • 1/2 Juice of 1/2 lemon
  • 2 slices bread or gluten free bread
  • Coriander to taste
  • 2 tbsp cottage cheese

Optional toppings:

  • Coriander

Instructions

  • Slice the tomatoes and place them in a bowl.
  • Add the olive oil, the salt and the lemon and toss it well.
  • Toast the bread on a toaster or use the oven or a frying pan.
  • Divide the cottage cheese into the 2 bread slices.
  • Split the tomato filling into the 2 bread slices.
  • Sprinkle some coriander on top and serve.
