Shakshuka

Ingredients

  • 1 chopped onion
  • 4 gloves garlic minced
  • 1 red bell pepper diced
  • Olive oil as needed
  • 1 can peeled tomatoes
  • 4 eggs
  • Cumin to taste
  • Paprika to taste
  • Chili powder to taste
  • Salt to taste
  • Chopped cilantro

Instructions

  • Heat a drizzle of olive oil in a skillet and add the onion. Let it brown.
  • Add the garlic and cook for another 1 to 2 minutes.
  • Add the bell pepper and cook until it's slightly crispy.
  • Add the spices and stir well to incorporate all the flavours.
  • Pour in the peeled tomatoes and, as you stir, break them into pieces.
  • Once it's boiling, reduce the heat and create 4 cavities.
  • Crack the eggs into the cavities and cover until they are cooked to your liking.
  • Sprinkle with chopped cilantro.
