Heat a drizzle of olive oil in a skillet and add the onion. Let it brown.
Add the garlic and cook for another 1 to 2 minutes.
Add the bell pepper and cook until it's slightly crispy.
Add the spices and stir well to incorporate all the flavours.
Pour in the peeled tomatoes and, as you stir, break them into pieces.
Once it's boiling, reduce the heat and create 4 cavities.
Crack the eggs into the cavities and cover until they are cooked to your liking.
Sprinkle with chopped cilantro.
