Start by placing the coconut oil in a stockpot and turn the heat on to high power.
As soon as the coconut oil is very hot, add the cumin seeds and fry until they begin to release their aroma. To let you know the right point, they should start popping like popcorn.
Put in the onion and saute until it starts to get soft and translucent.
It is possible to make this curry with other types of lentils, notably green or yellow lentils. However, the cooking times may need to be adjusted. You can also experiment with other legumes such as chickpeas, azuki beans, or peas.If you want to add vegetables and/or chicken pieces, just put them in before the lentils and let them cook slightly. As for rice, simple basmati rice is the most traditional option. If you want a more elaborate and wonderful one, add onion and cinnamon sticks while cooking the rice.
