Chocolate Mousse

Ingredients

  • 200 gr dark chocolate, 70% cocoa or higher
  • 50 gr butter or coconut oil
  • 5 eggs
  • 4 tbsp brown or yellow sugar (it can also be white sugar, but it is more processed)

Instructions

  • Melt the dark chocolate with butter or coconut oil.
  • Separate the egg whites from the yolks.
  • Beat the egg whites until stiff peaks form.
  • In another bowl, beat the yolks with sugar.
  • Add the melted chocolate to the yolks and mix.
  • Add the egg whites and fold in gently
  • Chill in the fridge to firm up.
