Ingredients
¼cupgranulated stevia
½cuptahini
2eggs
A pinch of salt
2 drops vanilla essence
1cupoat flour
1c. cafébaking soda
½cupEaster chocolate eggs
Instructions
Start by adding the stevia, tahini, and eggs in a bowl and mix well until you get a whiter mixture.
Add the salt and vanilla essence and stir well.
Add the oat flour and the baking soda and mix everything together until you get a thick, somewhat viscous mixture.
Add the broken easter eggs and mix well.
With the help of an ice cream scoop, scoop tablespoons of the mixture onto a baking tray lined with baking paper.
Repeat the process until you finish the dough.
Bake in a preheated oven at 170º, for approximately 10 minutes or until golden brown.
Notes
These cookies can be made with spelt, wheat, or buckwheat flour. If you make them with finer flours such as coconut, almond, or rice flour, you will need to watch out for the quantities.You can replace the tahini with peanut butter.If you like it better, you can add chocolate chips or even chopped nuts.
