Apple and Cinnamon Muffins

They are perfect for a different and quick breakfast (if you prepare them the previous day) or for a Sunday family afternoon lunch. They're quite healthy since they are low on sugar. And we cannot forget that the grated apple gives them some sweetness.

Ingredients

  • 1 grated apple
  • 2 cups oat flour
  • ½ cup brown sugar
  • Pinch of salt
  • ½ tbsp cinnamon in powder
  • ½ cup peanut butter
  • ½ olive oil
  • 2 eggs
  • ½ cup lukewarm water
  • 1 tsp baking powder
  • Oat flakes to taste
  • Apple slices to taste

Instructions

  • Start by mixing the sugar and the eggs until you achieve a homogenous mixture.
  • Add the apple and peanut butter and mix it again.
  • Add the olive oil and the water and beat the mixture until homogeneous.
  • Add the flour, salt, cinnamon, and baking powder and incorporate them without beating the batter too much.
  • Pour the batter into a muffin pan and sprinkle the oat flakes on top.
  • Add some apple slices if you enjoy them. You can also add them at the end when taking the muffins out of the oven.
  • Bake them in a preheated oven at 170º for 20 to 25 min or until they are baked and golden brown. The toothpick test is your best friend in these situations.

Notes

You can replace the apple with other fruits such as a pear. If you use oranges, wild berries, or other juicier fruits, do not forget to rectify the flour quantity, if needed.
