Ingredients

  • 2 cups whole wheat flour
  • 2 cups spelt flour
  • 3/4 cup lukewarm water
  • 1 tbsp melted coconut oil
  • 4 eggs for the batter
  • 3 eggs boiled
  • 1 cup brown sugar
  • Salt to taste
  • Seeds of 5 to 6 cardamoms
  • ½ lemon zest
  • ½ orange zest
  • 1 sachet dry baker's yeast

Instructions

  • Start by placing the whole wheat flour, spelt flour, salt, and dry baker's yeast in a large bowl and mix all the ingredients together until you get a smooth mixture. Set aside.
  • In another bowl, add the sugar and eggs and beat well with the help of a wire whisk.
  • Add the coconut oil slightly warmed in the microwave and stir into the mixture.
  • Add the dry ingredient mixture to the bowl of liquids and mix lightly.
  • Add the warm water and mix well.
  • Add the cardamom seeds and the lemon and orange zest and knead well until the ingredients are evenly distributed.
  • If the bowl is large, knead the dough vigorously for about 7 to 8 min.
  • If the bowl is not very large, sprinkle a smooth surface with flour and place the dough on the surface. Knead it well for about 7 to 8 minutes. Put the kneaded dough back into the bowl.
  • Cover the bowl with a cloth and let it rise for at least 2 hours.
  • Boil 3 eggs to put in sweet bread.
  • Preheat the oven to 200º.
  • On a tray previously lined with baking paper, place the sweet bread in a ball/circle shape.
  • Dig a hole in the middle and place the hard-boiled eggs in it.
  • Beat an egg and brush it over the dough.
  • Bake for approximately 30 min or until the dough is cooked.
  • Remove from the oven and let it cool before serving.

Notes

Replace the flours used with the flours you like best. You can use only one type of flour if you wish.
Add sweet herbs if you like. I didn't have any and since it wasn't easy to find in the supermarket, I put in cardamom and it turned out great.
For a sweeter touch, you can add the juice of an orange.
Two or three days after you make this Portuguese easter bread, it will start to dry out. Put it in the toaster and eat it with some butter. It's wonderful!
