Fake Rice Pudding Recipe

This is the perfect Easter recipe. A healthy alternative to the traditional rice pudding, with all the flavor and freshness. A substitute that works perfectly!

Ingredients

  • 1 ½ cups oat flakes
  • 2 cups milk
  • 2 sticks cinnamon
  • 1 lemon zest
  • 2 to 3 drops vanilla
  • 1 tbsp coconut jelly
  • 2 yolks eggs

Instructions

  • Start by placing the oat flakes in a pan.
  • Turn on the heat and add the cinnamon, vanilla, and lemon zest.
  • Then add 1 cup of milk.
  • Stir well and let it begin to boil.
  • Keep stirring, so that the oats don't stick to the bottom of the pan.
  • Add the coconut jelly and stir to sweeten evenly.
  • Separate the egg yolks from the egg whites and set aside. You can save the egg whites for another recipe.
  • In a bowl, add the egg yolks and the other cup of milk and mix well.
  • Pour the egg yolk and milk mixture into the pan and stir for a few minutes.
  • Once the mixture is well incorporated, your face rice pudding is ready.
  • If necessary, add a little milk or water if it gets too thick.
  • Serve it sprinkled with cinnamon or lemon zest.

Notes

Use plant-based drinks if you prefer. The use of cow's milk is not essential for the recipe to work.
You can use whole eggs for this recipe, however, it will alter the traditional rice pudding flavor a bit.
If you don't want to use eggs, that's okay. It won't have as intense a rice pudding flavor, but it will still look great. 
As for the sweetener, you can use honey, agave jelly, or whatever you like best. If you use a granulated sweetener, make sure it dissolves well.
