I still can’t believe that this is all happening, I am actually writing on my blog! I promised you were going to follow my daily routines and that starts right now: it’s recipes day!
For those who don’t know me, I love eating salmon, it’s one of my favorite foods. A few days ago, I decided to go to the market in Alvalade and bought some fresh salmon to make some salmon burgers with coriander paste topping. As side dishes, I made delicious guacamole and bought some Danish rye bread. I also made a super simple Portuguese-style salad with lettuce and tomatoes.
Check the recipes below.
Salmon burgers (around 6 burgers):
- 800gr of fresh salmon (minced)
- 1 big-sized onion
- 1 piece of ginger (diced/minced)
- Lemon
- A pinch of salt and pepper
- Olive oil to fry the burgers
- Chop the salmon and the onion and set them aside in a bowl
- Season the salmon with salt, pepper, and lemon
- Add the diced ginger
- Mix all the ingredients very well and mold small balls with your hands
- Place a little bit of olive oil in the frying pan and fry the burgers (around 2/3 min on each side)
- Place a little spoon of the coriander paste on top of the burgers
- And voilà, it’s ready to eat.
Guacamole:
- 2 ripe avocados
- 1 medium tomato
- 1 lime
- A pinch of salt and pepper
- Smash the avocados with a fork
- Dice the tomatoes and mix them with the avocados
- Squeeze the juice of the lime and add a pinch of salt and pepper
- Mix all the ingredients very well and serve.
