It’s almost middle of February and Valentine’s Day is coming up. There is no better way to celebrate than with some wonderful Red Velvet Pancakes.

Around here, I love a good dose of pancakes and I have the habit of baking them, even if only on weekends, for those nice and relaxed breakfasts.

But for this Valentine’s Day, I couldn’t miss a red/pink decorative touch, very typical of this day.

So here they are, my wonderful red velvet pancakes to celebrate Valentine’s Day.

I confess that I’m not the biggest fan of this day, the stores fill up with people, the restaurants are always full, and my energy is exhausted. ahah

Believe me it’s true!

But I think it’s always a good time to think about those who we love the most, and maybe to surprise our better half with a delicious breakfast or snack like these red velvet pancakes.

For some reason that I can’t explain, I’ve always had a fascination for red velvet cakes!

How to make these Red Velvet Pancakes?

To surprise our dearest people, be they boyfriends, girlfriends, husbands, wives, parents, children, grandparents, etc., the big secret is to cook with love!

There is nothing better than putting effort and pleasure when cooking for our loved ones.

My suggestion for making these red velvet pancakes is to use red gel food coloring, which makes the pancakes super red without using too much food coloring.

Mix the ingredients very well, but carefully, so that there is enough air in the batter to make the pancakes fluffy.

Then you can eat them with great pleasure!

For this recipe you’ll need:

  • Flour
  • Milk
  • Brown or white sugar
  • Salt
  • Cocoa powder
  • Egg
  • Baking powder
  • Vanilla essence
  • Red velvet coloring
  • Coconut milk previously stored in the refrigerator (only the solid part)
  • Maple Syrup
  • Red berries to taste

What are the tricks to make red velvet pancakes fluffy and delicious?

You can use natural products, such as beets, to make Red Velvet pancakes. However, it is very difficult to get a deep red color, since the cocoa will overpower it. Therefore, the use of red velvet coloring is essential.

When you add the baking powder, mix it well, but do not beat the batter too much, so that the pancakes get very fluffy.

You can use a few drops of lemon to keep the color bright.

If you want really, really fluffy and taller pancakes, I suggest you let the batter rest for 5 to 10 minutes, so that the baking powder acts and the batter gets air bubbles.

As for the topping, the trick is to leave the can of coconut milk previously stored in the fridge, so that part of the coconut milk solidifies.

Then just remove that solid part and whip it well, along with the maple syrup, as if it were heavy cream. It’s super creamy!

If, in a freezer with the help of a pastry bag, making an elaborate effect in the protection in the most refrigerators for 2 hours so that the consistency is easy to work with.

Red Velvet Pancakes

Red Velvet Pancakes are perfect for Valentine's Day or any other time you want to surprise your loved ones.

Ingredients

For the pancakes

  • 2 cups flour (you can use oat flour or spelt flour)
  • 2 cups milk
  • 3 a 4 tbsp brown sugar or white sugar
  • A pinch of salt
  • 2 tbsp  cocoa powder
  • 1 egg
  • 1 tsp baking powder
  • 1 tsp vanilla essence
  • 2 tsp red velvet coloring

For the icing

  • 1 can coconut milk previously stored in the fridge (only the solid part)
  • 2 tbsp maple syrup
  • Red berries to taste

Instructions

For the pancakes

  • Start by adding in a bowl the flour, sugar, salt and cocoa and mix well.
  • Add the milk and mix again.
  • Add the egg to the mixture and stir.
  • Add the vanilla essence and the coloring.
  • Finally, add the baking powder and incorporate.
  • In a non-stick frying pan, place spoonfuls of the mixture in order to make the shape of a pancake and cook on medium / low heat for 1 to 2 min on each side.
  • Repeat the process until you finish the batter. Depending on the size, you will get about 10 to 12 pancakes. Set aside.

For the icing

  • Take the can of coconut milk out of the fridge and place the solid part in a bowl.
  • Crumble it up a bit and add the maple syrup.
  • Crush everything in a blender or beat it with a mixer (it gets velvety with the mixer). Set aside.

To assemble

  • Arrange the pancakes one by one on a plate, forming a tower and intersperse with the coconut milk topping.
  • Decorate with red fruits on top and serve.

Notes

Para fazerem panquecas red velvet com produtos naturais, podem uar beterraba em puré ou ralada. Tenham apenas em atenção que, com o cacau, a cor vai ficar bem mais escura. 
 
You can use a few drops of lemon to keep the color bright (it also helps if you choose to use beets).
