Alida’s Food is turning 4 years old and to celebrate, I’m bringing you a Decadent Red Wine Cake very tasty and decadent, as the occasion demands.

Nevertheless, it is a relatively healthy cake, since it contains olive oil, stevia, and cocoa powder, and it is also gluten-free since the chosen flour was gluten-free oatmeal.

I believe that it is possible to have a healthy and balanced diet while including some more delicious recipes in our diet.

It all depends on the quantities we ingest, the exercise we do, and our daily diet.

How do you make this Red Wine Cake?

Just add the liquid ingredients and whisk very well.

Then add the solids and incorporate everything, very carefully, because we want the cake to be fluffy and grow well.

Put it in a pan and bake it in the oven at 160º.

The decoration is up to you, but the blackberries and figs are beautiful and combine perfectly with the sweetness of the red wine.

For this recipe you’ll need:

  • Stevia
  • Eggs
  • Olive oil
  • Red Wine
  • Cocoa powder
  • Oat flour
  • Baking soda
  • Baking powder
  • Figs and blackberries for decoration

What are the tricks to get this Red Wine Cake right?

  1. Beat the stevia well with the eggs, so that a homogeneous batter is formed. This process helps the cake to become fluffier.
  2. Olive oil intensifies the flavor of the cocoa.
  3. Red wine is, of course, the king of this cake. But don’t worry, it doesn’t taste like alcohol.
  4. Involve the dry ingredients well, without beating too much, so that the cake is fluffy and grows in the oven (instead of collapsing, which sometimes happens).

Red Wine Cake

A perfect cake to celebrate any occasion! Super tasty, very fluffy and somewhat healthy. But don't worry, even though it has red wine, it's not alcoholic.

Ingredients

  • cup  granulated stevia
  • 2 eggs
  • cup  olive oil
  • 1 cup red wine
  • ½ cup  low-fat cocoa powder
  • 2 cups oatmeal flour
  • 1  baking soda
  • 1 c. chá  baking powder
  • Figs and blackberries for decoration

Instructions

  • Start by putting the stevia in a bowl.
  • Add the eggs and beat well, until you get a homogeneous mixture and a little whitish.
  • Add the olive oil and stir well.
  • Add the red wine and stir again.
  • Add the cocoa powder and stir well until the mixture starts to thicken a bit.
  • Add the oat flour and stir until the mixture is smooth and lump-free.
  • Add the baking soda and baking powder and incorporate well into the mixture, without beating the dough too much.
  • Pour the batter into a silicon or aluminum baking pan.
  • Bake in a pre heated oven at 160º, for 35min or until the cake is cooked.
  • Let it cool and decorate with figs and blackberries.

Notes

The flour can be replaced with wheat flour, spelt flour, or other flour that has the same consistency. If using rice flour, almond flour, or coconut flour, you need to pay attention to the quantities used.
Stevia is a natural sweetener, which comes from a plant and is therefore considered healthier. But use whatever sugar you like best. It also works with liquid sweeteners, like maple syrup.
You can serve it with whatever fruit you like, and if you're a sweet tooth, you can make a chocolate ganache.
