Mango Ice Cream

With this heat, nothing better than Mango Ice Cream for dessert. Or who knows, to satisfy certain wishes during the afternoon. This Mango Ice Cream is not only delicious but healthy and perfect to eat without feeling any guilt

Ingredients

  • 2 ripe mangoes
  • 1 cup Greek yogurt
  • ¼ cup coconut jelly
  • 3 tbsp lemon

Instructions

  • Cut the mangos in half.
  • Make checkered cuts and remove the mango pulp. Freeze.
  • Using a blender or a food processor, mix the greek yogurt, coconut jelly, and lemon juice.
  • Remove the mango from the freezer and add them to the blender or food processor.
  • Grind the mix until all mango pieces are well mashed and there is a homogeneous mixture.
  • Pour the mixture into an ice cream box, an English cake tin, or a bowl and place it in the freezer for at least four hours.
  • When it is serving time, take it out from the freezer and decorate it with mango pieces and mint leaves.
  • Serve it and enjoy.

Notes

You can use the fruit you enjoy the most, it's not mandatory to use mango.
The coconut jelly and the mango are a good fit, but you can use another sweetener. Honey is a good option.
I'll advise you to use liquid sweeteners so that you achieve a creamier mixture. 
The lime, instead of the lemon, is also an option and it intensifies the mango ice cream flavor.
Before serving, you can decorate it with cookie crumbles or some pistachios, it looks wonderful!
For a more complete dessert, make a healthy brownie and serve it.
