Spelt and Blueberries Waffles

Today's recipe is a wonderful Spelt and Blueberries Waffles, ideal to eat for breakfast, any day of the week.

They are perfect to eat for breakfast, and if you prepare them the day before, you won't have any trouble first thing in the morning.

Whether it's for a weekend brunch or for breakfast before going to work, it's best to make them really yummy!

My suggestion is to add blueberries and maple syrup as toppings, or if you want something even sweeter, you can always opt for some nice whipped cream and melted chocolate.

Believe me, no one can resist!

For a healthier and versatile option (which is usually my choice), don't put sugar in the batter. So you can put your favorite sweetener as a topping or even turn these waffles into a savory option (yes, smoked salmon and avocado works perfectly!).

How do you make these Spelt and Blueberries Waffles?

These Spelt and Blueberries Waffles are very easy to make. I recommend beating the batter by hand, so it gets super fluffy and light.

Let the batter rest for 30 min, or overnight. This way they are super fluffy on the inside and crispy on the outside.

You don't need to grease the waffle maker, since you are going to put olive oil in the batter, unless your waffle maker is non-stick.

For this recipe you'll need:

  • Spelt flour
  • Salt
  • Baking powder
  • Eggs
  • Milk
  • Olive oil
  • Maple Syrup
  • Blueberries
  • Butter (optional)

What are the tricks to getting these Spelt and Blueberries Waffles right?

  1. Use room temperature eggs and beat the egg whites well. If necessary, add 2 or 3 drops of lemon, so that the egg whites set up perfectly.
  2. Once you add all the ingredients together, add the baking powder and the egg whites and don't over beat the batter. The idea is that all the air incorporated in the egg whites will make your waffles super fluffy and light.
  3. Let the batter rest for at least 30 minutes.
  4. When you put the batter in the waffle maker, make sure it is very hot, so that your waffles are crispy on the outside.

Spelt and Blueberries Waffles

  • 2 cups spelt flour
  • Salt to taste
  • cup milk
  • 1 tbsp olive oil
  • 2 eggs
  • 1 tsp baking powder
  • Maple Syrup
  • Blueberries
  • Butter to put on top optional


  • Mix the flour with the salt in a bowl and stir well.
  • Add the milk and olive oil and stir again.
  • Separate the egg yolks from the egg whites and beat the egg whites. Set aside.
  • Add the egg yolks to the bowl and incorporate into the mixture.
  • Add the beaten egg whites and baking powder and stir into the mixture.
  • Pour the mixture into the waffle maker once it is very hot.
  • Cook for 2 to 3 minutes or until golden brown and crispy.
  • Repeat the process until you finish the batter.
  • Serve with blueberries and maple syrup. If you like, add a small square of butter, it's just amazing!


You can make the waffles immediately, but the result is even better if you let the dough rest for 30 minutes.
This recipe yields about 8 waffles and I usually make the whole thing because I like to have waffles ready for the following days.
To heat them up just put them back in the waffle maker or pan for a few minutes. Or for the lazy ones, put them in the toaster and they'll be TOP!
You can also keep the waffles in the freezer, to have them always at hand.
