These Avocado and Poached Egg Waffles are perfect for brunch or a quick lunch without too much work.

I love waffles, whether sweet, savory, whatever. But I especially like the salty ones.

In fact, anything savory to me is a must try and these avocado and poached egg waffles are no exception.

First, they have avocado. That alone is a winner!

And guys, poached egg with the liquid yolk? That's all I want right now!

It's not that I don't like hard boiled eggs, but for me it's much more umami to eat eggs with the runny yolk, and let the waffle absorb all that yolk.

Also, waffle batter gets even better if you let it rest. So it's perfect to make the day before.

So at lunchtime you just put the waffle maker to work and in a few minutes your lunch is done.

How do you make these Avocado and Poached Egg Waffles?

These Avocado and Poached Egg Waffles are a blast, how wonderful they are!

I advise you to beat the batter by hand, so that it becomes super fluffy and light. But if you whip it in a mixer, no one dies for it. Practicality above all!

Let the batter rest for 30 min, or overnight. This way they are super fluffy on the inside and crispy on the outside.

You don't need to grease the waffle maker, since you are going to put olive oil in the batter, unless your waffle maker is non-stick.

For this recipe you'll need:

  • Oatmeal flour
  • Salt
  • Baking powder
  • Eggs
  • Milk
  • Olive oil
  • Avocado
  • Poached eggs
  • Argula
  • Pickled onion
  • Basil

What are the tricks to getting these Avocado and Poached Egg Waffles right?

  1. Use room temperature eggs and beat the egg whites well. If necessary, add 2 or 3 drops of lemon, so that the egg whites set up perfectly. It's not really necessary (be as practical as you can!), but it helps to make them fluffier.
  2. Once you add all the ingredients together, add the baking powder and the egg whites and don't over beat the batter. The idea is that all the air incorporated in the egg whites will make your waffles super fluffy and light.
  3. Let the batter rest for at least 30 minutes.
  4. When you put the batter in the waffle maker, make sure it is very hot, so that your waffles are crispy on the outside.

  • 2 cups oatmeal flour
  • A pinch of salt
  • cup milk
  • 1 tbsp olive oil
  • 2 eggs
  • 1 tsp baking powder
  • ½ avocado slices per waffle
  • 1 poached egg per waffle
  • Argula to taste
  • Pickled onion to taste
  • Basil to garnish


  • Mix the flour with the salt in a bowl and stir well.
  • Add the milk and olive oil and stir again.
  • Separate the egg yolks from the egg whites and beat the egg whites. Set aside.
  • Add the egg yolks to the bowl and incorporate into the mixture.
  • Add the beaten egg whites and baking powder and stir into the mixture.
  • Pour the mixture into the waffle maker once it is very hot.
  • Cook for 2 to 3 minutes or until golden brown and crispy.
  • Repeat the process until you finish the batter.
  • Assemble in layers: arugula, poached egg, pickled onion.
  • Finally, add the basil.
  • Serve with the sliced avocado.


You can make the waffles immediately, but the result is even better if you let the dough rest for 30 minutes.
If you have any waffles left over, you can heat them up. Just put them in the waffle maker or in the frying pan for a few minutes. Or for the lazy ones, put them in the toaster and they get great!
You can also keep the waffles in the freezer, to have them always at hand. 
As for the toppings, I love this combination. But you can put whatever you like.
