There’s nothing like celebrating with the simplest things and these Tangerine Cakes will do it on your New Year’s Eve table!

I love simple and quick recipes, especially when I have a whole dinner table to prepare and don’t have much time.

That’s why I chose these tangerine cakes to complete my New Year’s Eve table. This way I can have more time to cook the other recipes that require more attention.

You’re probably all sick of food, especially sweets, since Christmas time it’s always full the most amazing desserts.

But here’s one reason to bake these tangerine cakes. They are super light, they are not very sweet and they are not at all nauseating.

How to cook these Tangerine Cakes?

These tangerine cakes are the easiest recipe ever. You just need a blender or a kitchen robot and bang, all ready in no time.

It’s one of those recipes that saves your life when you’re short of time!

I’ve used tiny molds, but you can do it in a big one if it makes it easier for you.

For this recipe you’ll need:

  • Tangerines
  • Olive oil
  • Eggs
  • Brown sugar
  • Flour
  • Baking powder
  • Icing sugar for decoration

And what are the tricks to make Tangerine cakes to drool for?

There are no special tricks here.

My advise is that you to use a blender or a kitchen robot for this recipe, since it will be easier to mash the tangerines and it doesn’t take much work.

The idea is to gather all the ingredients with the exception of flour and baking powder.

When the flour and baking powder are sieved they will have an even better result because the cakes will become fluffier. But it’s not mandatory and it works perfectly in any case.

Silicone forms are our best friends, because it is not necessary to grease them. In other words, your work gets even easier!

Finally, before you put any coating (in this case, icing sugar), let the cakes cool down. Otherwise, the topping will melt.

Tangerine Cakes

These tangerine cakes are perfect for those days when you are in a rush and need a quick and easy recipe. They are great for getting your New Year's Eve table ready easier or even as a snack to take anywhere.

Ingredients

  • 3 a 4 tangerines
  • 2 eggs
  • ¾ cup olive oil
  • 1 cup brown sugar can be adjusted if you want your cakes sweeter
  • 2 cups wheat flour you can use oat or spelt flour as well
  • 1 tsp baking powder
  • Icing sugar to sprinkle

Instructions

  • Preheat the oven to 180º.
  • In a blender or in a kitchen robot, add the peeled tangerines, eggs, olive oil and sugar.
  • Blend well at high speed, so that the ingredients form a liquid and homogeneous mixture.
  • Put the mixture in a bowl and add the flour and baking powder. If you sift the flour and the baking powder, you will obtain a fluffier consistency, but this step is not fundamental.
  • Mix the flour and the baking powder well with the help of a spatula. As soon as there are no lumps and the dough is all homogeneous, you can pour it into cake tins.
  • If you use silicon tins/molds, you do not need to grease them.
  • Bake for 30 minutes or until the cakes are baked. They should be golden brown on top.
  • Remove from the oven and let the cakes cool down.
  • Remove from the molds and sprinkle with icing sugar or your favorite topping.

Notes

These tangerine cakes are super versatile and therefore do not have to be made only with tangerine. 
 
Make them with the fruits you like the most... be it orange, pineapple, mango, coconut, anyway. Use whatever you want, the process is the same. 
 
Replace the brown sugar with the sweetener of your preference and adjust the quantity if you want a sweeter cake. 
 
Once again, I love making this recipe with olive oil because I think it gives a more intense flavor, but you can use oil, butter or even coconut oil. 
 
As for the topping, I wanted it to be something simple. But you can make a glaze, a vanilla topping, a ganache or any other topping you like.
 
Ahh and if you want a slight vanilla flavor in your tangerine cakes, put some drops of vanilla essence or 1 tsp of vanilla sugar.
