At this time of the year, there’s nothing like some tasty tiny cakes, like these Apple and Cinnamon Muffins.

They are very moist and with the oat flakes on top, crispness is something they don’t lack!

These muffins are perfect for a different and quick breakfast (if you make them the previous day) or for a Sunday family afternoon snack.

Kids and adults alike will love this recipe!

Plus, they are quite healthy, since they are low in sugar. Also, we cannot forget that the grated apple gives them some sweetness.

I just want to add that you can freeze these muffins and unfreeze them as you feel like eating them. However, it is advisable that you take them out of the freezer at least 30 minutes to 1 hour in advance, so that they thaw properly and naturally.

You can also put them in the microwave for a few minutes until they thaw completely and get toasty.

If you want to take a step further, you can eat them spread with butter! Buuuut they won’t be healthy anymore. Though, you can believe me when I say that it tastes like heaven!

How do you make these Apple and Cinnamon Muffins?

These Apple and Cinnamon Muffins are to die for! Very easy and quick to make.

In about 20/25min they come out of the oven and the big trick is just to be careful while stirring the dough.

After adding the dry ingredients we should just fold the dough, without beating it too much, so the muffins don’t get too thick.

For this recipe you’ll need:

  • 1 grated apple
  • 2 cups oat flour
  • ½ cup brown sugar
  • A pinch of salt
  • ½ tbsp cinnamon in powder
  • ½ cup peanut butter
  • ½ cup olive oil
  • 2 eggs
  • ½ cup lukewarm water
  • 1 tsp baking powder
  • Oat flakes to taste
  • Apple slices to taste

What tricks will ensure that these Apple and Cinnamon Muffins taste just right?

  1. The apple should be well-grated so that there are no pieces of it in the muffin. Our aim is to achieve a homogeneous mixture.
  2. The salt will give the muffins some flavor intensity while cutting down on the sweetness at the same time.
  3. Using peanut butter will result in a smoother consistency.
  4. Olive oil adds a touch of flavor to the muffins, making them more intense.

Ingredients

  • 1 grated apple
  • 2 cups oat flour
  • ½ cup brown sugar
  • Pinch of salt
  • ½ tbsp cinnamon in powder
  • ½ cup peanut butter
  • ½ olive oil
  • 2 eggs
  • ½ cup lukewarm water
  • 1 tsp baking powder

Instructions

  • Start by mixing the sugar and the eggs until you achieve a homogenous mixture.
  • Add the apple and peanut butter and mix it again.
  • Add the olive oil and the water and beat the mixture until homogeneous.
  • Add the flour, salt, cinnamon, and baking powder and incorporate them without beating the batter too much.
  • Pour the batter into a muffin pan and sprinkle the oat flakes on top.
  • Add some apple slices if you enjoy them. You can also add them at the end when taking the muffins out of the oven.
  • Bake them in a preheated oven at 170º for 20 to 25 min or until they are baked and golden brown. The toothpick test is your best friend in these situations.

Notes

You can replace the apple with other fruits such as a pear. If you use oranges, wild berries, or other juicier fruits, do not forget to rectify the flour quantity, if needed.
