Since I was a kid I LOVE Bacalhau à Brás. In fact, it’s one of those dishes that even today I ask my mom to make because there’s no one who cooks codfish like her.

Even my friends ask my mom to make the wonderful Bacalhau à Brás.

And so, today I bring you a healthy Bacalhau à Brás. A really good recipe, that you can eat at any time and without any kind of guilt. Isn’t it fantastic?

HEALTHY BACALHAU À BRÁS RECIPE (APPROX. 4 SERVINGS):

INGREDIENTS:

  • 1 package of shredded cod
  • 3 cloves of garlic
  • 1 medium onion
  • Olive oil to taste
  • Salt and pepper to taste
  • 1 leek
  • 2 eggs
  • Coriander to taste (or other herb of your choice)

PREPARATION METHOD:

  1. Start by thawing the codfish and soaking it in water if necessary.
  2. Once the codfish is thawed, remove the water (you can drain or, if you prefer, squeeze the codfish a little with the help of a cloth). Set aside.
  3. Slice the onion into rounds or half-moons and place in a frying pan with a drizzle of olive oil.
  4. Cook the onions, over medium heat, until soft and translucent.
  5. Add the garlic cloves and cook some more.
  6. Let the water evaporate a little.
  7. Meanwhile, slice the leeks.
  8. As soon as there is not much water left, add the leek and the previously drained cod.
  9. Add salt and pepper to taste.
  10. Let it cook well and wait for the water to evaporate again. If necessary, lower the heat a little.
  11. When the codfish is almost ready, add the 2 eggs. Mix them well in the previous mixture and turn off the heat immediately.
  12. Add some coriander and mix again.
  13. Arrange the codfish on a platter and garnish it with some more coriander to make it pretty.

 

Legumes à Brás da Márcia

 

VEGETABLES À BRÁS RECIPE (VEGETARIAN VERSION) (APPROX. 4 SERVINGS):

INGREDIENTS:

  • 200 ml vegetable cream (e.g. rice cream)
  • Turmeric, black pepper, and salt to taste
  • 3 cloves garlic
  • 1 medium onion
  • Olive oil to taste
  • 2 leeks
  • 2 grated carrots
  • 1/4 green cabbage cut into strips
  • 1/4 red cabbage cut into strips
  • 4 cups of grated white potatoes
  • Parsley to taste (or another herb of your choice)
  • 1 handful of pitted black olives

PREPARATION METHOD:

  1. Start by combining in a bowl the vegetable cream with turmeric, black pepper, and salt.
  2. Mix very well and set aside.
  3. Slice the onion into slices or half-moons and place in a frying pan with a drizzle of olive oil.
  4. Cook the onions, over medium heat, until soft and translucent.
  5. Add the garlic cloves and cook some more.
  6. Let the water evaporate a little.
  7. Meanwhile, slice the leeks.
  8. As soon as there is not much water left, add the potatoes, mix them well, and add the vegetables (leek, carrots, green, and red cabbage).
  9. Let them cook well and wait for the water to evaporate again. If necessary, lower the heat a little.
  10. When it’s almost done, add the vegetable cream mixture with the seasonings. Mix it well with the previous mixture and turn off the heat immediately.
  11. Add the parsley and mix again.
  12. Arrange the vegetable à brás on a platter and garnish with more parsley, to make it pretty.

Suggestion: You can boil the eggs well, in case you like your codfish to be healthier and drier. I like it very juicy!

If you prefer, you can use other vegetables, such as carrots, grated zucchini, or thinly sliced cabbage.

If you want a touch of potato in your codfish, you can grate white or sweet potatoes and add them or cut them into thin strips and add them to your preparation.

As for the plating, you can also use some onion and garlic and saute them in olive oil, to add on top of the codfish, before sprinkling it with coriander.

As for the raw vegetables, use your imagination. Replace the vegetables with ones you like or add more vegetables. A good option is to mix white potatoes with sweet potatoes.

You can also add tofu cream to make it creamier.
